Allulose: The rare sugar that’s taking the industry by storm

For decades, consumers, ingredient scientists, and manufacturers alike sought the most elusive solution to making better-for-you versions of favorite sweet indulgences: a sweetener that performs and tastes like sucrose yet without the calories. ASTRAEA Allulose tastes great naturally, it is about 70% as sweet, as sucrose. Consumers will welcome their favorite comfort foods at reduced calories and sugar with minimal change in taste and flavor. Highly soluble, it dissolves completely without recrystallizing. It’s certified GRAS by the U.S. Food and Drug Administration and has comparable functional bulking, browning, and freeze-point depression properties as sucrose while providing just 0.4 calories per gram and no grams of added or total sugars.
