Yes, it does have a bitter taste, depending upon the extent of hydrolysis

Yes, and the intensity varies on the degree of hydrolysis.  There are several bitter masking options to reduce this significantly, many which will label as "natural flavor".  The challenge is matching the performance of the masker with the bitter notes in the specific product you are adding the pea protein to.

The results for the consumer study reviewed by Barb Stuckey were interesting, but I'm concerned about the lack of statistical analysis and the low n for some of the groups.  Were the differences observed between years significant?  Also, were the participants from different regions of the country?  I would think that region, as well as income, education, ethnicity, and other demographic groups would show some differences.  I've lived in multiple regions of the country, and the eating preferences are quite different in different locations, to the point where you can't even find some products in certain regions that are available everywhere in others (try finding grits in 5 lb bags outside the Southeast, for example).
